Tteokbokki (Korean: 떡볶이; also known as teokbokki, ddeokbokki, topokki, and dukboki)^[1][2] is a popular Korean snack food made from soft rice cake, fish cake and sweet red chili sauce; gochujang.^[3] It is commonly purchased from street vendors or pojangmacha. Originally it was called tteok jjim (Korean: 떡찜) and was a savory braised dish of sliced rice cake, meat, eggs, and seasoning.

History

Tteokbokki is a traditional Korean street food that can be purchased from street vendors, also called “pojangmacha” in Korean. The history of tteokbokki dates back to the late Joseon dynasty. There are many hypotheses of its origin. According to bibliographic data, the first tteokbokki in Korean history appears in a cook book called “Siui jeongseo(Korean: 시의정서)” written in the late Joseon dynasty. However, tteok (the main ingredient, also known as rice cake) was produced before in the Three Kingdoms period, suggesting tteokbokki predates this period. Tteokbokki can also be found in medical records: a book called “Shik nyo chanyo(Korean: 식료찬요)” written by Jeon Sunui, a medical officer in the Joseon dynasty (1460). The purpose of the book was to cure people through food and tteokbokki was part of it.
Tteokbokki was also a part of Korean royal court cuisine in the Joseon dynasty. While the modern version of tteokbokki is red and spicy, the original version was brown and plain. It was called "gungjung tteokbokki (Korean: 궁중 떡볶이)", Palace Tteokbokki. Just like the name implies, gunjeon tteokbokki was a main example of Korean haute cuisine. It was mainly composed with a combination of tteok, meat, vegetables and different kinds of seasoning. After the introduction of gochujang (Korean spicy paste made of chili peppers) during the Joseon dynasty, tteokbokki became red and spicy. It is believed that the main transition from plain to spicy tteokbokki occurred during the 1950s after the independence of Korea. In modern days, most of the tteokbokki sold in street vendors is red and spicy.
Presently, tteokbokki is mostly regarded as a street food available from street vendors (pojangmacha) and small independent snack bars. Recently, however, there have been efforts to turn tteokbokki from street food culture to a food franchise. This is mainly because of the continuous demand for tteokbokki among Korean people. Tteokbokki is now regarded by some as a big potential business. As a result, many brands and chain restaurants of tteokbokki have appeared since 2009. Additionally, there are also efforts to globalize tteokbokki in the international food market. Korean government has established a so-called tteokbokki laboratory in 2009 to try to globalize the dish and to provide technical support for its enhancement. Annually, about a billion Korean won is spent in this governmental project to try to make tteokbokki into an international product. In order to achieve a place for tteokbokki into the global market, there is investigation on market research, development of sauces, types of rice cakes and cooking methods to fit into various countries. The spelling of “topokki” was officially given by this institute in order to appear friendlier for the international market. Most tteokbokki was made of flour in modern days but after this governmental project, there's been encouragement to use rice instead. This is mainly because rice is regarded as healthier than flour and to help boost consumption in the domestic rice market. ^{[4] [5]}

Modern history

Noodle ddeokbokki (Korean: 쫄볶이)

Following the Korean War, a new type of tteokbokki became very popular. While the older version was a savory dish, this latter type was much spicier, and quickly became more popular than the older traditional dish. In addition to traditional ingredients, this tteokbokki used gochujang, a fermented, spicy paste made from chilli peppers, along with fish cakes. Other ingredients added to tteokbokki include boiled eggs, pan-fried mandu (Korean dumplings), sausages, ramyeon (which then becomes rabokki/labokki (Korean: 라볶이)), a variety of fried vegetables, and cheese. These days, many kinds of tteokbokki are popular such as seafood tteokbokki(Korean: 해물 떡볶이) or rice tteokbokki(Korean: 쌀떡볶이). Flour tteokbokki was popular in early days, but rice tteokbokki is more popular these days.
Sindang-dong in Seoul, where tteokbokki was first sold, is still very famous for the dish and treated as the mekkah or the center of tteokbokki. Since tteokbokki has become one of the most popular dishes, one will easily find a place to enjoy eating tteokbokki in Korea.

Ingredients

Typical ingredients of tteokbokki are boiled rice cakes ("tteok"), Surimi ("eomuk"), spring onion, gochujang, onions, diced garlic, salt, sugar and different kinds of seasoning based on the taste. Other ingredients include boiled eggs, pan-fried mandu (Korean dumplings), sausages, ramyeon (Korean version of ramen), and a variety of fried seafood or vegetables (which is called “twigim” in Korean).

Varieties

Tteok jjim, an early variant of modern tteokbokki, was once a part of Korean royal court cuisine.^[6] This type of topokki was made by boiling Garaetteok, Kamaboko, meat, vegetables, eggs, and seasonings in water, and then serving it topped with ginkgo nuts and walnuts. In its original form, tteokbokki, which was then known as gungjung tteokbokki, was a dish served in the royal court and regarded as a representative example of haute cuisine. The original tteokbokki was a stir-fried dish consisting of garaetteok (가래떡, cylinder-shaped tteok) combined with a variety of ingredients, such as beef, mung bean sprouts, green onions, shiitake mushrooms, carrots, and onions, and seasoned with soy sauce.^[7]

Types of tteokbokki

Due to the constant popularity of tteokbokki, many kinds of tteokbokki have been invented. Just like other types of popular food, tteokbokki went through various fusions. For example, tteokbokki with pork cutlet is a combination of traditional tteokbokki with pork cutlet sauce and meat. There is also another type called "Shanghai Topokki" which replaced traditional red pepper sauce with the famous Chinese oyster sauce. One of the famous fusions of tteokbokki among Koreans is rabokki, a combination of tteokbokki and ramyeon (the Korean version of ramen). For busy people, tteokbokki are also sold in skewers called “Tteok kkochi”. “Tteok kkochi" is mostly fried rather than boiled and the sauce is slightly different as well. There are many more different fusions of tteokbokki, such as curry tteokbokki, seafood tteokbokki, tteokbokki pasta, cheese tteokbokki, chicken tteokbokki, etc. ^[8]

Gungjung tteokbokki

Rice Cake Pasta and Vegetables, Royal Style Gungjung-topokki is a dish made of white rice cakes, beef and various dried and raw vegetables stir-fried with soy sauce for seasoning. Tteokbokki was not spicy and only made with soy sauce until the 18th century. But nowadays, it is cooked with a spicy red bean paste, which had been seen in recipes since the 1950s. Main ingredients are white steamed rice cake, beef (top round),brown oak mushrooms.^[9]

Cream sauce tteokbokki

Cream sauce tteokbokki(or Carbonara tteokbokki)^[10] is a combination of the Korean style carbonara sauce and rice cakes. It did away with stereotypes that tteokbokki is red and spicy food. And it is also making a tteokbokki a kind of haute cuisine.

Accompaniments

Sundae, Omuk(type of fish cake), and Korean fritters are also popular Korean snack foods. Especially, Sundae, and fritters taste good with tteokbokki's spicy sauce.

– Dance teacher order to let Jimin show his abs for No More Dream choreo, so Jimin’s face was depression and anxiety. He talked about it to Rap Mon that he hated to show his abs. But when 1st perform on the stage, people started talking about Jimin a lot,

Sejarah Singkat Huruf Korea (HanGul)

Korea memiliki huruf tersendiri yang disebut HanGul (한글: dibaca "han-geul"), yang diciptakan oleh Raja Sejong pada masa pemerintahan dinasti Yi sekitar tahun 1443.

Awal keberadaan Hangeul banyak memperoleh tantangan dari berbagai kalangan. Banyak yang menilai bahwa huruf Hangeul adalah huruf rendahan, huruf anak kecil atau huruf kampungan. Tetapi pada masa pendudukan Jepang justru huruf Hangeul yang banyak dipakai sebagai media tulisan. Sehingga keberadaannya sangat berjasa sampai sekarang.

Baru sejak 1948 Pemerintah Republik Korea (대한민국: dibaca "tæhan min guk") menetapkan pemakaian Hangeul di sekolah-sekolah dan dokumen-dokumen resmi. Sampai saat ini di seluruh Korea sudah memakai Hangeul, namun huruf Kanji Cina (Hanja) pun masih dipakai untuk kata-kata tertentu.

Huruf Hangeul mempunyai 24 karakter dasar, terdiri dari 10 huruf vokal dan 14 huruf konsonan. Kemudian dari sejumlah karakter tersebut dikembangkan lagi dengan ditambahkannya 11 huruf vokal rangkap dan 16 huruf konsonan rangkap. Dalam tulisan bahasa Indonesia ataupun bahasa Inggris kita menggunakan abjad atau huruf romawi. Namun dalam bahasa Korea digunakan abjad atau huruf Korea tersendiri yang disebut han-geul [한글] yang diciptakan oleh Raja Sejong sekitar tahun 1443.

Sama halnya seperti dalam abjad romawi, dalam susunan abjad han-geul juga terdiri dari huruf vokal dan konsonan. Kalau dalam abjad romawi kita mengenal 5 huruf vokal yaitu a, e, i, o dan u, dan 21 huruf konsonan, namun dalam huruf hangeul terdapat 10 huruf vokal dasar dan 14 huruf konsonan dasar.

Huruf Hangeul mempunyai 24 karakter dasar, terdiri dari 10 huruf vokal dan 14 huruf konsonan. Kemudian dari sejumlah karakter tersebut dikembangkan lagi dengan ditambahkannya 11 huruf vokal rangkap dan 16 huruf konsonan rangkap.

Berikut adalah susunan pembagian abjad hangeul:

1. Huruf Vokal
   
   • Vokal dasar [10] : 아, 야, 어, 여, 오, 요, 우, 유, 이, 으.
   • Vokal rangkap [11] : 애, 얘, 에, 예, 외, 와, 왜, 워, 웨, 위, 의.

       Romanisasi Hangeul adalah representasi atau translasi penulisan huruf Korea [Hangeul] ke dalam huruf Romawi atau ejaan bahasa Inggris. Sebagaian orang merasa bahwa untuk mempelajari bahasa Korea cukup dengan mempelajari romanisasi saja, padahal bunyi pengucapan Korea tidak cocok dengan bunyi ejaan romawi [romanisasi], karena tidak semua abjad romawi bisa mewakili karakter atau bunyi hangeul begitu juga sebaliknya tidak semua karakter hangeul mewakili abjad romawi, misalnya dalam karakter hangeul tidak mengenal huruf V, F, atau Z. Oleh karena itu mempelajari bahasa Korea hanya dengan mengandalkan romanisasi saja akan tidak akurat.
       
       Romanisasi biasanya digunakan untuk orang yang tidak bisa membaca tulisan Hangeul. Romanisasi digunakan dalam translasi Hangeul ke dalam abjad romawi, misalnya dalam penulisan kamus bahasa Korea, buku-buku percakapan/ungkapan bahasa Korea yang diperuntukkan bagi pemula atau wisatawan yang tidak bisa bahasa Korea, dalam tulisan-tulisan di TV atau di Internet sebagai translasi tulisan Hangeul ke dalam bentuk romawi. Bahkan di Korea sendiri biasanya terdapat tulisan romanisasi dalam papan petunjuk atau papan informasi di termpat-tempat umum untuk mempermudah pembacaan Hangeul bagi warga asing yang berkunjung ke Korea.
       

       

       Namun demikian penggunaan romanisasi Hangeul tidak bisa dijadikan standar baku tulisan huruf Hangeul ke dalam bentuk tulisan Romawi untuk semua negara karena terdapat banyak perbedaan cara membaca romanisasi Hangeul dengan pengucapan asli Korea.
       
       

       
       

       Contoh Romanisasi karakter Hangeul menggunakan sistem Revisi

       
       Seseorang yang awam dan sama sekali tidak memiliki pengalaman dengan bahasa atau tulisan Korea, misalnya dalam menggunakan buku percakapan bahasa Korea yang ditulis dengan Romanisasi saja tanpa bisa membaca Hangeul-nya jelas akan menyesatkan dan salah dalam pengucapannya.
       
       Memang sedikit berbeda antara tulisan romawi dengan bunyi ucapan orang Korea.
       
       Yang menjadi hal sulit bagi orang awam dalam pembacaan romanisasi tersebut adalah penulisan 어 yang dalam romawi ditulis 'eo' tetapi dalam listening terdengar bunyi "o" jelas, juga penulisan ㄱ yang dalam romawi terkadang ditulis 'g' atau 'k'.  Jadi apabila kita membaca hangeul hanya mengacu kepada tulisan romawinya saja maka akan sulit untuk pengucapan bahasa Korea secara benar. Contoh huruf hangeul yang hampir mirip pengucapannya tetapi berbeda dalam penulisan romawinya [Romanisasi], misalnya:
       
       어 romawi 'eo' bunyi 'o';  오 romawi 'o' ;  bunyi 'ou'
       여 romawi 'yeo' bunyi 'yo'; 요 romawi 'yo' ; bunyi 'you'
       
       contoh kata yang ditulis dengan romanisasi revisi:
       어이 = eoi, artinya hey --> [ romanisasi ditulis "eoi"; lafal berbunyi 'oi' ]
       오이 = oi, artinya mentimun --> [ romanisasi ditulis "oi"; lafal berbunyi 'oui' ]
       Romanisasi harus dianggap sesuatu yang hanya bermanfaat bagi orang yang tidak tahu Bahasa Korea, tidak pernah ingin tahu atau sebagai panduan bagi yang sedang belajar huruf Hangeul. Tetapi bila ingin Belajar bahasa Korea secara benar dengan hanya mengandalkan romanisasi saja dapat menjadi penopang dan menghambat pengucapan bahasa korea yang benar karena pengucapan suara Korea menjadi tidak sempurna kalau hanya berdasarkan pengucapan suara abjad Romawi.
       
       Banyak sistem Romanisasi yang berbeda yang telah digunakan dan dijadikan standar. Di antaranya adalah sistem Romanisasi McCune-Reischauer dan sistem baru Romanisasi Revisi. Namun dari berbagai sistem Romanisasi tersebut terkadang kita sulit untuk tahu sistem mana yang harus digunakan.
       
       Berikut adalah contoh sistem romanisasi McCune-Reischauer dan sistem romanisasi Revisi. Yang sekarang banyak digunakan yaitu sistem baru romanisasi revisi. Untuk membedakan standar penulisan romawi mana yang mendekati pengucapan asli Korea, silahkan dengarkan audio dari kata-kata tersebut.

       Catatan:
       Untuk mempelajari Bahasa Korea secara baik dan benar, jangan terpaku untuk mempelajari Bahasa Korea dari bacaan Romanisasi saja tanpa mempelajari karakter Hangeul dan bunyi pengucapannya secara benar. Perbanyaklah mempelajari 'listening kosakata' yang diucapkan orang Korea langsung.
